(Please note that these recipes have been altered to allow for preparation in smaller quantities.  Therefore, some of the measurements may seem a little bit odd and will, in some instances, likely require "careful estimation!")

Pecan Crusted Chicken Breast
Serving size: 5 pieces

5, 4 oz. chicken breasts
4 oz. of bread crumbs
1 2/3 tbsp. + 1/4 tsp. chopped pecans
2 1/3 tbsp. + 1/4 tsp. beaten eggs
1/4 cup + 1/2 tsp. of 2% milk
1 tbsp. honey
1/4 cup + 3 2/3 tbsp. pancake syrup

Instructions: Combine bread crumbs and chopped pecans. Dredge chicken in egg wash and bread crumbs.
Sauté on grill until chicken is no longer pink.  Bake at 300 degrees for 30 minutes or until done.

Make honey glaze by combining honey and syrup. Heat to 165 degrees. Add pecans and serve over chicken.

Strawberry Pretzel Dessert
Serving size: 36 servings

14.75 oz. of crushed, thin pretzels
1/2 cup of sugar
14.75 oz. of margarine
1 cup of whipped topping
17.75 oz. of cream cheese
Additional 4.375 oz. of sugar
12 oz. package of strawberry gelatin
20 oz. of boiling water
38 oz. of frozen, sliced strawberries

Instructions: Melt margarine; add sugar and pretzels. Press in bottom of pan. Bake at 375 degrees for 10 minutes. Cool.

Blend cream cheese and sugar into whipped topping; pour over cooled pretzels. Dissolve Jello in water. Add strawberries with juice. Place in refrigerator until Jello begins to gel. Pour over cream cheese mixture. Refrigerate.

Baby Bleu Salad
Serving size: 5 servings

5 oz. of Spring Mix
1.75 oz. of feta cheese crumbles
As desired: mandarin oranges and strawberries
5 oz. Balsamic Vinaigrette
1/4 cup + 3 1/3 tbsp. of Sweet & Spicy Pecans (see recipe below)

Instructions: Toss greens with vinaigrette and crumbled bleu cheese. Arrange orange slices over greens; sprinkle with strawberries. Top with Sweet & Spicy Pecans.

Sweet & Spicy Pecan Recipe

1 2/3 tbsp. + 3/4 tsp. sugar
1/4 cup + 3 1/3 tbsp. water
1/4 cup + 3 1/3 tbsp. pecan pieces

Instructions: Stir together sugar and warm water until sugar dissolves. Add pecan halves and soak 10 minutes. Drain, discarding sugar mixture.

2 7/8 tsp sugar
1 3/8 tsp. chili powder
Dash to taste of cayenne pepper

Combine sugar, chili powder, and cayenne pepper. Add pecans tossing to coat. Place on greased baking sheet. Bake at 350 degrees for 10 minutes or until pecans are golden brown.
