Hearty Oatmeal Pancakes
You'll need to soak the oats overnight, so while you're in the kitchen, mix the dry ingredients together also to save time in the morning. Serves 3-4
2 cups rolled oats
2 cups buttermilk or plain yogurt
The night before using, mix together in a large bowl. Cover and refrigerate overnight.
2 eggs (lightly beaten)
1/4 cup oil
In the morning, stir into oat mixture.
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
In a small bowl mix together then add to batter and mix briefly. Fry in a hot, greased frypan.
Variation: Stir in blueberries or shredded apples. |
